Planning out work meals must be one of the top three keto problems we face. Not only in the preparation of meals, but also in having variety. I hear people have been falling in love with the salad jars where you layer everything up, but I haven’t gotten into those just yet. Currently I keep it even more simple.
I still want mind sparking foods in order to make it through the work grind, so greens really help that brain food feeling. Adding on fermented foods will invigorate and feed your gut as well, which is directly related to memory.
The basics of keto allowed veggies is that you can eat green leafy vegetables and other vegetables that grow above the ground. Cucumbers and spinach, chard and kale, zucchni and a variety of squashes. Adding on herbs can give you tons of mouth flavor with ease. Rosemary, thyme and basil are my go to herbs for low carb salad making.
Vegetable do tend to have some carbs and you’ll want to account for them.
Going for home for lunch is an option for this cavewoman, but if you need to stay at the office or don’t have time for the drive you can simply leave a box of mixed greens, squeezer of lemon juice, and avocado or olive oil jar at work. There are couple of spices you can have on hand or use these pre-made ones.
