The Flavor of Curry Chicken Wings

When Aun first heard me say curry chicken wings there was automatically this are you sure that’s going to work face. And then they said “you do you” in total disbelief of the epicness to come.

I went with my gut and fried up the wings plain with no salt and just a quick rub of oil. Then I treated them like buffalo and once the wings were crispy I tossed them in the curry sauce and served. These wings are like buffalo wings in texture and sauce but with curry notes of turmeric, onion, ginger, fennel (on the last nose), and a touch of sweetness. Pure Indian Foods has now taught me what jaggery is, basically a version of sugar can that still holds nutrients. They use it in their jar of curry in a hurry which is what I used for this recipe. I also have DIY versions if you aren’t ready for the jar, but honestly the jar from Pure Indian Foods is literally award winning and makes this recipe sing.

Ingredients for Air Fried Curry Chicken Wings in the Ninja Foodi or any Air Fryer

air fryer curry chicken wings in bowl with curry in a hurry and pure indian foods ghee made in the ninja foodi

1 Pound of Chicken Wings

Avocado Oil – amazing for frying due to its neutral flavor and high smoke point.

Jar of Curry in a Hurry – This jar just makes everything incredibly easy by dipping a spoon in and pouring it over as a marinade or as a sauce at the end. Both versions are delicious and work for different reasons. As a sauce you get loads of flavor and the texture that comes with it while the marinade allows the flavor to infuse into the chicken and leads to the juiciest outcome.

Why I Love Pure Indian Foods Curry in a Hurry (mostly because it tastes amazing tbh)

  • Made with Grassfed Ghee
  • Won first place at the International Herb Symposium for simply delicious
  • Uses high-quality organic ingredients
  • Gluten-Free
  • Can be used as a marinade, sauce, or in a stir fry or seared method

Tools You Need for Air Fryer Curry Chicken Breasts

Ninja Foodi or any Air Fryer – The Ninja Foodi is bliss for these curry chicken breasts because of its roominess. We are just going to use the air crisp function for cooking so you can use any air fryer.

Meat Thermometer â€“ Because chicken wings range in their thickness levels a thermometer will make sure your chicken breasts are not only fully cooked, but also not overcooked.

Silicone Tongs â€“ Since we use the basket for these curry chicken wings it’s best to use tongs that won’t scratch it, and silicone is perfect for it. They’re also great for moving anything in the main pot as it can easily scratch.

Oil Spray Bottle â€“ Investment that then saves a blisston. Buying spray bottles already filled with oil is double the price or more of just buying the oil. Once you get this bottle you can just fill it yourself.

DIY Curry Wing Sauce

Combine 2 tablespoons of ghee with 1 and 1/4 teaspoons of curry powder and 1/2 a teaspoon of sea salt and heat and whisk right before the wings finish then spoon it in.

Air Fried Curry Chicken Wings Guided Recipe

preheat ninja foodi or air fryer

Preheat your air fryer to 380 degrees. If using the Ninja Foodi then place the black basket in and then preheat.

chicken wings being sprayed with oil

Dry the wings then spray them with avocado oil or toss with 1 tablespoon of avocado oil or ghee.

Spray the basket with oil then air fry the wings for 15 minutes. Open the lid and flip the wings then air fry at 400 for five minutes to get super crispy skin.

In the last two minutes prepare the wing sauce by combining curry in a hurry with ghee or ghee with curry powder and salt.

Check the internal temp of the wings is at least 165 degrees.

Remove the first round of wings to a bowl then air fry the next rounds of wings. Toss the first round with the sauce then add them back to the bowl.

Feel free to chow down on the first set or just let them cool while the others cook. Once the others are finished toss them in the rest of the sauce and serve.

1 Pound of Chicken Wings

Avocado Oil - sprayed or 1 tablespoon for tossing

Curry Wing Sauce

2 Tablespoons Ghee (for both)

1 Tablespoon Curry in a Hurry *see notes

or for DIY (instead of curry in a hurry)

1 and 1/4 teaspoons curry powder and 1/2 a teaspoon of salt

Equipment

Ninja Foodi or any Air Fryer

Meat Thermometer- for the perfect doneness

Oil Spray Bottle - Tiny investment that then saves a blisston. Spray bottles already filled with oil are double the price of just buying the oil.

Silicon Tongs: Use these to flip the meat. Silicon is best to avoid scratching your air fryer.

Instructions

NOTE: Turmeric is used in this recipe so use dishes and utensils you don't mind getting stained yellow. Turmeric slides of stained bowls but does stain wood.

1. Preheat the air fryer to 380 degrees for five minutes. If using Ninja Foodi place the black basket in the Foodi and preheat with the basket inside.

2. While the air fryer preheats lay out the chicken wings on a plate and pat them dry with a paper towel.

3. Spray one side of the chicken wings with avocado oil or toss all of the wings with one tablespoon of oil.

4. Lay half of the wings out in the air fryer to where they aren't touching so the air can circulate.

5. Air fry for 15 minutes then flip the wings with tongs and air fry at 400 for 5 minutes. This creates that extra crisp to the wings.

6. 2 minutes before the wings are done heat 2 tablespoons of ghee with 2 tablespoons of curry in a hurry jar sauce of 2 tablespoons of ghee with 1 and 1/4 teaspoons of curry powder and a half teaspoon of salt.

7. Use an instant-read thermometer to make sure the wings are at least 165 degrees then add the first round of wings to the sauce (I just add them to the saucepan after it's removed from the heat) and move them to a bowl.

8. Spray the basket again then add the next round of wings and air fry like the first round.

9. Toss the first round of chicken wings in the curry sauce them remove to the bowl.

10. Feel free to eat the first set of wings while the second ones fry up.

11. Once the other round of wings finishes frying toss them in the same sauce.

Enjoy!!!
