3-Minute 3 Ingredient Breakfast Ham Wrap

Ready for a super quick, epic mouth blissing treat that’s warm and yet bursting, literally from the tomatoes, with flavor? I truly love spending hours making dishes because the flavors reach so many layers of the meat or vegetable or whatever edible thing is harmonizing with those hours and spices. If I can get tons of flavor in an super filling wrap though when it’s two o’clock and I’ve forgotten to eat then it’s mentally empowering to know I can craft up a wrap in three minutes flat.

 

On those days where I’m hungry enough to scarf down cookies for breakfast, which I did today, I like to have backup ideas in case I am doing a Whole 30 or just want to start my gut off with nutrients rather than sugar, even if its honey from sung to bees. Especially during this pandemic I find there are days the world is so insane that quick food is all I can mentally handle.

This wrap is quick and the saltiness from the ham, the brightness of the cherry tomatoes and the warmth of the fluffy eggs makes this feel like an hour long mouth masterpiece.

Ingredients:

Makes 2 servings-

4 Ham Slices

8 Cherry Toamtoes

6 Eggs

Salt to Taste

Oil for cooking the eggs (Avocado, almond, or coconut are excellent high temp oils but eggs mostly use low temperature cooking so olive works too).

Directions:

  1. Set up your plate and a partners if you are sharing with two ham slices laid out and slice the tomatoes in half and set aside.
  2. Heat the oil in the pan on medium heat and then crack the six eggs into a small pan, to really build up the fluff, and then scramble them in the pan (I use a wooden spoon or spatula for this).
  3. Scramble your own way or follow my way: Stir the eggs continuously on high heat while taking them off the hear for about ten seconds while stirring then back on the heat for about thirty seconds but it does not have to be exact. Once you can run your spatula or wooden spoon through the center and it makes a lasting mark for a bit lower the heat to medium low and keep stirring but less frequently and go ahead and salt them now to taste and once they are cooked to your liking remove them from the heat.
  4. Cozy up the eggs into the ham wrap and add sliced tomatoes. If you have any herbs like basil or cilantro you could add those for extra mouth bliss.
