Smoked Salmon and Microgreens Egg Wrap – Whole 30, Paleo, and keto

Sometimes I don’t really want to make a whole casserole, simmer a sauce or use up seven dishes. There are days where mayo, smoked salmon, a little lemon and some microgreens or any herbs hits the spot in about five minutes.

I was at Costco and they had some Crepini Egg Wraps. They’re keto, paleo, Whole 30 and all that feel good jazz. The only ingredients are egg whites, cauliflower powder (must make now, anyone dehydrated a cauliflower before?), xantham gum, olive oil, sea salt and spices. My curiosity took over and I purchased the giganto pack of 8 wraps. Full on commitment right there.

After making several wraps here’s the review:

Hold Up: 4 out of 5. They do burst a little if you aren’t gentle, but overall they could hold their weight in sausage, eggs, salmon and even hot sauce.

Taste: 3 out of 4. I’m not huge on the taste as it neither tastes epic nor bland, it’s in between. I wouldn’t say it takes flavor away from the other ingredients, but nor does it compliment them.

Overall: Best Whole 30 and everything else wraps I’ve found, but I definitely want to conduct my own experiments on just using egg whites since it’s cheaper and once these open they can go stale fast and the bag does not reseal.


Five Minute Salmon and Egg White Wrap

Ingredients:

Crepini Egg White Wrap

2 T Mayo

Squirt of a Lemon

Microgreens or Herbs (cilantro, parsley, or basil would all work)

Smoked Salmon

Salt to Taste

Directions:

Lay down the egg wrap and layer mayo, however much salmon you wish and microgreens. Squirt a little lemon juice on top but just enough for flavor as too much liquid could mess with the wrap. Add salt to taste.

Start at the edges and slowly roll the wrap, and to eat fold it over again on itself like a pizza.

Deconstructed:

This is a very easy recipe to really separate out ingredients for so you can get to know them. Since there’s so few you will really be able to taste them as you eat too. As you go along just take a bite of the wrap solo style. Take a bite of the salmon, the herbs and even sprinkle some salt in your hand and have a tiny lick. If you can go full on pucker mode take a small bite into the lemon.

The more you deconstruct and smell the more intuitive food becomes.
